Aloha Zesty Crew!
Wow! I made these crackers for everyone at the retreat with Dr Cassar yesterday and they were so delicious that they vanished on the same day, and I had to go and make another batch! You can check out our video here:
I’ll list out the ingredients I used below, but please remember you can use any type of herb or vegetable with this recipe. This is why I love flax crackers so much, you can design them to suit your taste, or to suit whatever you have leftover in the fridge. Soak your flax seeds and sunflower seeds overnight, then just throw all the ingredients into the bowl, mix and pour…SO SIMPLE!
I know one thing for sure, once you start making your own crackers, you’ll never want to eat store bought crackers again (full of wheat, sugar and GMO) and they are a great substitute for bread. Always perfect on the side of a big bowl of salad, they give you that satisfied and full feeling. And of course, they are great for dips such as guacamole or hummus (we made another video for superfood hummus – coming soon! Even better, you can dip them and then eat them with the salad! Don’t forget to chew them slowly and properly for best digestion.
Okay, here’s my recipe but feel free to adjust it to whatever pleases you:
**ALWAYS SOAK YOUR SEEDS OVERNIGHT**
I cup flaxseed
1 cup sunflower seeds
**Ensure you dice the ingredients below finely**
1 small red capsicum (bell pepper)
1 small orange/green capsicum (bell pepper)
1-2 ripe tomatoes
1/2 cup red onion
Handful of fresh herbs – parsley, coriander, basil, oregano
1 Tbsp fresh lemon juice
1-2 Tspn curry powder (depending on your taste)
1/2 Tspn cayenne pepper (depending on your taste)
1 Tbsp sole salt or himalayan salt
1-2 Tbsp fresh lemon juice
**Optional extra – finely diced fresh coconut
Place the flax seed in a bowl and add 2-3 cups of water. The water should be sitting 2-3 cms above the seeds, leaving enough space for them to swell overnight. Do the same with the sunflower seeds.
In the morning you’ll find the flaxseed has swelled and you have a beautiful big bowl of gelatinous seeds, you don’t need to rinse them. You do however, need to rinse the sunflower seeds, give them a good rinse then add into the bowl full of flaxseed. Simply add all of the ingredients above and stir generously.
Pour a few cups of the mixture out onto a paraflexx (teflex) sheet as shown in the photo above. Spread the mixture evenly across the sheet out to the corners. Prepare another sheet and keep going until you’ve used all the mixture.
Place in the dehydrator on 115 degrees fahrenheit for 24 hours, then flip and remove the parallax sheet and dehydrate for a further 12-24 hours. Once you’ve flipped them, you can decide how crunchy you want them, I usually leave them another 24 hours for maximum crunchiness 🙂
