It’s SUPERFOOD chocolate heaven – gluten free, dairy free and processed sugar free. I’ll point out now that there is obviously sugar content in fresh dates, however they are a low-glycemic index food and a wonderful alternative to processed sugar.
This raw cake tastes better than any chocolate cake I’ve ever eaten. It’s so quick and easy to make, with very few ingredients. Every time I make this cake, it’s gone within a day, because everyone just loves it so much, and that includes the kids too. They don’t even know it’s gluten free, dairy free and processed sugar free … from what I’ve seen they just know it tastes great and that’s all that matters at the end of the day isn’t it?
One point I should make, is that you really do need a food processor for this recipe. It just does not work the same way with a blender.
Here’s the ingredients:
BASE:
300gr Raw Macadamia Nuts
3-4 Fresh Dates
2 Tbsp Coconut Oil
Place all ingredients in the food processor and pulse until mixed but not smooth (still a little bit chunky). Remove and press into the base of a glass pie dish and place in the freezer to set.
FILLING:
3-4 Ripe Avocados
3-4 Fresh Dates
3 Tbsp Coconut Oil
3 Tbsp Raw Cacao
1 Tbsp Organic Vanilla (paste or liquid)
Don’t even need to clean the food processor, leave the remnants of the base in there. Add all of the filling ingredients and process/pulse until smooth. In this case, the filling should be completely smooth as shown in the photo above.
Remove the base from the freezer and smooth the filling across the top with a spatula, back in the freezer for 30 minutes or in the fridge for a few hours. Don’t forget to add fresh raspberries and mint across the top before serving.
