One of my all time favourites for breakfast (and sometimes for dessert) this chia porridge really is a meal on it’s own and will fill you up for hours!
Chia seed (salvia hispanica) originates from Central and South America and these tasty little seeds are a great source of protein, calcium, magnesium, potassium, essential fatty acids, vitamin c and iron. They have both soluble and insoluble fibre which actually cleans your colon on the way out!
What I love most about them is that they are so quick and easy to prepare. Here are some suggested ingredients:
½ cup Chia Seed
1½ cup Spring Water
½ cup Coconut Milk
1 Tbsp Goji Berries
Banana, Strawberries, Blueberries, Raspberries
Coconut Yoghurt
Coconut Syrup
Soak the chia seed and goji berries together in spring water for 15 minutes stirring several times to break up the lumps, then add coconut milk and stir again. Top with your favourite fruits, some coconut yoghurt and coconut syrup. In the photo, I added some raw chocolate just because I can 🙂 This porridge can also be a healthy and delicious dessert!
