It’s time to reveal my all time favourite water kefir recipe, and this recipe is included in my new E-Book which will be released very soon.
So, this is how I get my daily dose of probiotics… I drink water kefir… and I make it taste like ginger beer! There is a thousand different recipes and flavour combinations you can use with water kefir and it’s always fun to experiment so please let me know if you have a favourite flavour as I’d love to try it.
A few important things I’ve learnt about water kefir:
> Water kefir granules are different to milk kefir granules in many ways. I don’t want dairy so I specifically buy the water kefir granules – you can buy them online or at your local health food store.
> Treat the granules with love and respect, you will learn to know what they like and what they don’t, so just experiment and share your experiences with those around you.
> I never use anything plastic, stainless steel or inorganic so all my ingredients are organic and I use only wooden implements or cloth for straining
> Think carefully about the type of water you are using. Just like I won’t drink water which is chlorinated, I also would not give it to my water kefir. I only use fresh spring water.
> Keep them in a nice environment, somewhere which has good energy flow, and no direct sunlight.
> BE AWARE: Although it has not happened to me, apparently the glass jar can explode when the lid is sealed tightly. I always seal it tightly because I want that fizzy effect and it hasn’t happened yet, fingers crossed.
The recipes is VERY simple as I like to keep things simple 🙂
1/2 cup water kefir granules
1 litre spring water
1/2 cup sweetener dissolved (coconut sugar, raw organic sugar or sweetener of your choice)
1 organic lemon (peeled and sliced)
1 large piece fresh ginger (peeled and sliced thinly)
*Probiotic capsule + 1 tbsp kombucha (optional)
In a large glass jar place 1/2 cup water kefir granules in 1 litre of spring water. Dissolve your sweetener in a little boiled water and let cool (I find raw organic sugar works best), then add the fresh lemon and ginger. Now open the probiotic capsule and pour the powder into the mixture. If you have kombucha, it’s a great idea to add a tablespoon. This creates a very powerful probiotic with millions of different strains.
Clip the lid on and wait approximately 48 hours for your delicious, fizzy ginger beer. I never drink it when it’s sweet, I always wait until the exact point where the sweetness is gone but is has not turned bitter yet. I absolutely love this stuff and drink it every single day. It replenishes lots of good bacteria and tastes great too.
**Don’t be afraid to use raw organic sugar, remember the sugar will get eaten as this is what the bacteria thrives on.
