The first time I saw these pancakes I thought they looked quite ordinary, however then I tasted them and WOW! Four simple ingredients and it takes a few minutes to put the ingredients together and a few hours to dehydrate. Two things I love about this recipe is the simplicity and the short amount of time required in the dehydrator when most other recipes require a lot longer.
Along with the fact that these pancakes taste so good. Really. If you have a bit of a sweet tooth and want to try something different then you must try them. As you will have noticed, I use the Excalibur Dehydrators, and for this recipe you will need some Paraflexx Sheets as the initial mixture has a runny consistency.
Try to find very ripe bananas, or buy them as ripe as possible and then let them ripen even more until they are soft. I usually wait until my bananas have black spots on them, at the time when many will throw them away, is the time I love them most as they are at their most nutritional state, and extremely high in potassium. Once they have the black spots on them they are also perfect for freezing, just throw them in the freezer, skin and all, and you can use them for your morning smoothies! Just take them from the freezer, soak them in a little warm water for a few minutes and peel them. And it also means you have a constant supply of bananas on hand.

Raw Blueberry & Banana Pancake
Makes 6 – 8 Pancakes
4 very ripe bananas
1/4 cup pecans (soaked overnight)
1/2 cup blueberries
1/2 teaspoon cinnamon
Chop bananss roughly in a bowl and mash gently with a fork until the larger pieces are broken down but it’s not too mushy.
Add the pecans, cinnamon and 1/4 cup of blueberries as you need to save some for the topping.
Drop big spoonfuls of mixture onto the paraflexx sheet and spread each on into the size of a small pancake (as per photo) then drop the rest of the blueberries on top.
Dehydrate for a few hours on 110 degrees, when dry enough flip them over onto the mesh screen and peel the paraflexx sheet off, then deyhdrate for a few more hours until they are soft on the inside and are a light and crispy on the outside.
Try serving them warm from the dehydrator topped with fresh fruit and some coconut yoghurt. Like I said, you have to taste it to believe how delicious they are, the combination of the warm bananas and walnuts is incredible.
