We had this delicious little treat for lunch yesterday, and it’s such a great way to replace a conventional ‘sandwich’. You can check out my post called ‘What can I eat for breakfast’ where I talk about the bio dynamic sprouted bread which is used for this snack. I also have photos of it, and explain where to buy it on that post. I have tried just about every possible bread alternative and this is the only one which tastes good, and is made ethically with great ingredients. They do mention there may be gluten present, however I have spoken to gluten intolerant people who have been fine with it, so it just depends on the individual. Try it for yourself!
Firstly drizzle some cold pressed olive oil across the bread, then top with Nut Cheese (see Raw Mediterranean Mushroom Casserole for recipe) followed by fresh tomato slices and fresh basil. You could always add some pesto if you have some left over from the wonderful casserole.
